There are three types of tea - Green (unfermented), Oolong (semi-fermented) and Black (fully fermented). Oolong originated in the 18th Century in the Fujian Province of China. The dark green, well twisted leaf produces a mellow, pleasing liquor with a touch of greenishness. This is a delicate and mild tea, more earthy than typical green teas, and lighter than most black teas.
